Passover Pineapple Kugel

Definitely a favorite among the kids and the pickiest of eaters!

1 stick of margarine
1 1/4 cups of sugar
8 eggs
3 cups of matzah farfel
2 cans of crushed pineapple
  • Preheat the oven to 350 degrees
  • Melt margarine; pour into a large bowl. Add sugar and stir
  • Add eggs one at a time and mix well
  • In a separate bowl, soak the farfel in warm water and drain well
  • Add the farfel and pineapple to the mixture and combine
  • Pour into greased 9x13 baking dish
  • Sprinkle with cinnamon
  • Bake 45-60 minutes or until firm
